As a certified Olive Oil Sommelier, Amelia brings scientific precision and heartfelt craftsmanship to every bottle, helping to redefine what premium olive oil truly means.

Rooted in one of the world’s top ten olive-producing nations, the SP360 estate is more than a farm—it’s a living legacy. It began with her father, Ziad Bilbeisi, who turned 300 acres of barren Jordanian desert into an award-winning olive grove, now home to over 315,000 trees. Their mission: to combine deep-rooted heritage with cutting-edge science, creating an olive oil that supports daily wellness and delivers verified health benefits.

After building a successful career in corporate training and development, Amelia returned to the family estate with a clear vision—one centred on quality, traceability, and health. She now leads product innovation and sensory testing at SP360, where every batch is third-party tested and traceable from tree to bottle.

“Too often, olive oil is treated like a commodity,” Amelia says. “But truly great oil—especially high in polyphenols—requires care and precision. It’s alive, and it should be nurtured.”

Since becoming a certified sommelier in 2019, Amelia has refined her palate through weekly blind tastings, drawing inspiration from wine and whiskey experts. In 2022, she completed her Master Miller certification in Spain, further cementing her role as a leader in the high-polyphenol space.
