In an industry steeped in tradition and long dominated by men, Amelia Bilbeisi is quietly reshaping the world of extra virgin olive oil. As a certified olive oil sommelier, she brings scientific precision and heartfelt craftsmanship to every bottle – helping redefine what truly premium olive oil can be.
Rooted in one of the world’s top ten olive-producing nations, the SP360 estate is more than a farm: it’s a living legacy. It began with her father, Ziad Bilbeisi, who transformed 300 acres of Jordanian desert into an award-winning olive grove, now home to over 315,000 trees.
Their shared mission: to blend heritage and innovation, creating an olive oil that is traceable, rigorously tested, and crafted with care.
After a successful career in corporate training and development, Amelia returned to the family estate with a clear vision – one built on quality, integrity, and full transparency. Today, she leads product development and sensory testing at SP360, where every batch is independently verified and fully traceable from tree to bottle.
“Too often, olive oil is treated like a commodity,” Amelia says. “But truly great oil – especially high in polyphenols – requires care and precision. It’s alive, and it should be nurtured.”
Since becoming a certified sommelier in 2019, Amelia has honed her palate through weekly blind tastings, drawing inspiration from wine and whiskey experts. In 2022, she completed her Master Miller certification in Spain, further deepening her technical expertise in olive oil production.
With Amelia at the forefront, SP360 continues to champion early-harvest, cold-extracted olive oil with exceptionally high polyphenol levels – crafted for those who value provenance, sustainability, and real proof of quality.
